This recipe makes chocolate cupcakes with white chocolate forsting and blackberry topping. It's the perfect chocolate cupcake!

240 g white chocolate
200 ml heavy cream
80 g butter
60 g white sugar
1 cup blackberries
380 g white sugar
180 g all purpose flour
75 g cocoa powder
1/2 tsp salt
5 g baking soda
10 g baking powder
200 g yogurt
100 g vegetable oil
1/2 cup hot brewed coffee
1 tsp vanilla extract
Chop 240 g white chocolate into smaller chunks and add into a bowl with 200 ml heavy cream and 80 g butter.
Melt the mixture in microwave, for approximately 2 minutes. Check every 40 seconds to make sure you are not burning the chocolate.
Add 240 g white sugar and whisk until sugar is incorporated.
Chill the frosting for at least 1 hour.
Preheqt the oven to 160 C. With the help of an electric mixer, beat 380 g white sugar into 100 g vegetable oil and add 3 eggs.
Sift 180 g flour, 75 g cocoa powder, salt, baking soda and baking powder into the mixture. Switch to the paddle attachment and continue to beat until combined.
Add 200 g yogurt and continue to beat.
Add 1/2 cup hot brewed coffee and 1 tsp vanilla extract into the mixture and mix until incorporated.
Fill the cupcake tray halfway through the slots and cook at 160 C for 20 minutes, until a pick insertes into the center comes out clean.
Cool down the cupcakes and using a piping bag frost the cupcakes, add blackberries or any fruit of your preference to top.
