This recipe makes a moist and delicious banana bread, very simple and needs little equipment! Takes 15 minutes to prepare and 60 minutes to bake.
Ingredients for Banana Bread
120 g unsalted butter - melted
150 g white sugar
2 eggs - room temperature
1 1/2 tablespoon yogurt
4-5 ripe bananas - smashed
260 g plain flour
Pinch of salt
10 g baking powder
1/2 tsp ground cinnamon

Pre-heat the oven to 180 C with fan.
Melt 120 g butter and cool down. Add 150 g white sugar and mix for approximately 2 minutes until the sugar is mostly dissolved.
Add 2 eggs and continue to beat the mixture until the eggs are fully incorporated, then add 1 1/2 tablespoons of plain yogurt and mix until combined.
Using a fork or using a food processor smash 4-5 ripe bananas. You will have about 2 cups of smashed bananas in the end.
Add the bananas into the mixture along with a few drops of vanilla extract, then using the paddle attachment of a standing mixer or using a spatula combine the bananas into the batter.
Sift 260 g plain flour into the bowl, add 10 g baking powder, 1/2 tsp ground cinnaon and a pinch of salt. Fold the flour using a spatula or beat the mixture with the paddle attachment until the dry ingredients are fully incorporated into the banana bread mixture.
Pour the batter into a rectangular cake tin (non-stick, or sprayed/oiled), cook for 60 minutes until a knife entered into the center comes out clean.
Wait for 10 minutes for the banana bread to cool down, serve with walnuts, bananas or any side of your choosing.
